Cilantro Lime Shrimp

Well, to post something a little different than accessories and clothes, here's a light delicious meal I made for the hubs. It's a fairly simple dish that's pretty yummy!


Inspiration

Ingredients
  • 1 tblsp. butter
  • 1 tblsp. olive oil
  • 2 cloves garlic, minced
  • 1 medium onion, chopped
  • ¼ tsp. red pepper flakes
  • ½ tsp. Mexican oregano
  • 2 roma tomatoes, chopped
  • 1 lime, zest and juice
  • ½ tsp. salt
  • ½ tsp. black pepper
  • 1 pound shrimp, split and deveined
  • 2 tblsp. chopped cilantro
  • Pasta, rice or baguette (optional) 


First, heat the olive oil and melt the butter in a skillet.
Mince 2 cloves of garlic and chop a medium onion and add it to the heated oil and butter. Cook approximately 3 minutes until the onion begins to wilt.


Season with the red pepper flakes and oregano and continue cooking until the onions become translucent, another couple of minutes.

Chop two roma tomatoes and add them to the skillet and cook until the tomatoes are soft.


Next, add the shrimp, lime zest and juice. Season to taste with salt and black pepper.


Cook until the shrimp are just opaque. Remove from heat and stir in the cilantro. Serve with pasta, rice or baguette. We used angel hair pasta. It was delicious!
