Pizza Bites

My whole family LOVES pizza. When I saw this recipe for bite sized pizza, I knew I had to make it.

Inspiration



Ingredients
  • 3/4 cup flour
  • 3/4 teaspoon baking powder
  • 1 tablespoon Italian seasoning
  • pinch of salt 
  • pinch of red pepper flakes 
  • 3/4 cup whole milk
  • 1 egg, lightly beaten
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 cup cubed pepperoni
  • 1/2 cup store-bought pizza sauce
1. Preheat the oven to 375 degrees. Grease a 24-cup mini-muffin pan. In a large bowl, whisk together the flour, baking powder, Italian seasoning, salt and red pepper flakes (if using) ; whisk in the milk and egg. Stir in the mozzarella, Parmesan and pepperoni; let stand for 10 minutes.




2. Stir the batter and divide among the mini-muffin cups. Bake until puffed and golden, 20 to 25 minutes.


3. Meanwhile, microwave the pizza sauce until warmed through. Serve the puffs with the pizza sauce for dipping.


Delicious!

Samoa Cupcakes

I love baking cupcakes and love finding new recipes to try! I found this recipes for Samoas Cupcakes like the Girl Scout cookie! 


Inspiration


Ingredients
For the Cupcakes

  • 2 cups sugar
  • 1-2/4 cup flour
  • 3/4 cup Cocoa
  • 1-1/2 tsp baking powder
  • 1-1/2 tsp baking soda
  • 1 tsp salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1 tsp vanilla
  • 2 tsp coconut flavoring
  • 1 cup coconut, packed
  • 1 cup boiling water



For Salted Caramel Buttercream

  • 2 stick butter, softened
  • 2 tsp vanilla
  • 1/2 cup caramel topping, plus more for drizzling
  • 1 lb powdered sugar (about 4 cups)
  • 1 tsp salt



For the Homemade Chocolate Syrup

  • 1/4 cup cocoa powder
  • 1/4 cup sugar
  • 1/4 cup cold water
  • pinch of salt
  • 1/2 tsp vanilla


Preheat oven to 350 degrees and line 24 muffin tins with cupcake liners.


In a large bowl, combine sugar, flour, cocoa, baking soda, baking powder and salt.


Add in eggs, milk, oil, vanilla and coconut flavoring and mix well.


Mix in coconut and then add boiling water.(Batter will be very thin).


Pour batter into muffin tins, filling each cup not more than 3/4 full. Bake at 350 degrees for 22-25 minutes or until a toothpick inserted in the center comes out clean. Let cool for a few minutes and then remove and place on wire cooling racks.



For the salted caramel buttercream.


First, cream butter until fluffy.


Add in vanilla and caramel topping. Add powdered sugar and salt and mix until smooth. If the icing is still too thin add more powdered sugar.


Wait until the cupcakes are completely cooled and then ice them with the buttercream.


For the Homemade Chocolate Syrup


Combine all ingredients in a small saucepan over medium heat and whisk until smooth.


Bring sauce to a boil and continue to whisk until sauce becomes thick. Remove from heat and let cool slightly.


Finish the cupcakes by drizzling the chocolate syrup and the leftover caramel topping over the iced cupcakes. Top the cupcakes with some toasted coconut flakes.

Cheesy Garlic Biscuits

My husband and I absolutely love the cheesy garlic biscuits at Red Lobster. That's pretty much all we love there so we don't go there often. When I found this post on Pinterest, I was really excited! I was prepared for a bit of a let down but I was very pleasantly surprised with the outcome!

Inspiration


Ingredients
  • 1 pack buttermilk biscuit mix (I used Bisquick, about 1 1/2cups)
  • 1 1/2cups shredded cheddar cheese
  • 1/2 cup milk
  • 2 tbsp butter
  • 1 tbsp oregano (you can omit or use less)
  • 3/4 tsp garlic salt


Preheat oven to 400F. Spray cooking sheet with non-stick spray.

Put biscuit mix, cheese and milk in a bowl and mix well to form a sticky dough.


Using an ice cream scoop or spoon, drop lumps of dough onto cookie sheet about 1.5 in apart. Bake for 10 minutes.


In a bowl, melt butter and mix with oregano and garlic salt.


When the timer goes off, take them out and brush with butter mixture and bake about 5 minutes more.


Transfer into a plate and serve immediately.


Absolutely wonderful!

Banana Bread Muffins

I thought I would try another recipe. I love bananas. On the last grocery trip, I bought a few. I couldn't eat them all fast enough before they went super ripe. Luckily, I found this recipe so I didn't have to throw them out.

Ingredients
  • 3 Very ripe bananas, mashed
  • 2 Eggs
  • 1 & 3/4 cups of all-purpose flour
  • 2/3 cup of brown sugar
  • 1/2 stick of butter
  • 2 teaspoons of baking powder
  • 1/4 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • Optional  – a little splash of liquor, I used rum.
This is a simple recipe that is absolutely as delicious as it sounds! I got this recipe from a blogger's mom's recipe...and it's exactly what you would hope a mother's recipe would be!

Preheat the oven to 350 degrees F.

First in a little bowl you need to separate the egg whites and blend them until frothy. Put the eggs yolks in a larger bowl to use in the next step.

In a big bowl mix the sugar, yolks and melted butter.


Add bananas slowly to mix taking turns with the flour.


Add all the rest of the ingredients and the egg whites you mixed first.

Take a muffin pan and either in set liners or spray with nonstick spray. Fill each about 2/3. You can top with chocolate chips, nut, etc. Place in oven for about 25 minutes or until an inserted toothpick or fork comes out clean.


Enjoy! These are truly delicious muffins!

Southern Style Biscuits with Sausage Gravy

My husband loves biscuits and gravy. Recently, I found recipes on Pinterests for southern style biscuits and sausage gravy. So, I thought I'd make it for him for being such an awesome hubby!


Inspirations



Ingredients

Biscuits
2 cups all-purpose flour
1 teaspoon sugar
1 tablespoon baking powder
1 teaspoon salt
8 tablespoons butter, cubed
3/4 cup milk


Sausage Gravy
1 pound pork sausage
3 tablespoons flour
2 cups milk
1 teaspoon black pepper
1/2 teaspoon sea salt




First, make the biscuits. In a large bowl combine flour, sugar, baking powder and salt. Cut butter into mixture until it begins to look like cornmeal.



 Make a well with flour mixture and slowly add milk into the middle. Knead dough with your fingers, adding milk when necessary. Roll out dough onto a lightly floured surface and roll out to desired thickness. Cut with small biscuit cutter (I used a cup).




Bake at 350 degrees F for 12 minutes or until golden brown.




While the biscuits are baking, you can start the sausage gravy.


In a large skillet, brown the sausage on medium heat until it is fully cooked. Sprinkle flour over the sausage and stir it together until coated. Cook for a couple of minutes. Add milk in and stir until it forms a gravy. Cook over medium low heat for 3-5 minutes. Add more milk if gravy gets too thick.




Serve over biscuits!




This was a very delicious southern breakfast!

Cilantro Lime Shrimp

Well, to post something a little different than accessories and clothes, here's a light delicious meal I made for the hubs. It's a fairly simple dish that's pretty yummy!


Inspiration

Ingredients
  • 1 tblsp. butter
  • 1 tblsp. olive oil
  • 2 cloves garlic, minced
  • 1 medium onion, chopped
  • ¼ tsp. red pepper flakes
  • ½ tsp. Mexican oregano
  • 2 roma tomatoes, chopped
  • 1 lime, zest and juice
  • ½ tsp. salt
  • ½ tsp. black pepper
  • 1 pound shrimp, split and deveined
  • 2 tblsp. chopped cilantro
  • Pasta, rice or baguette (optional) 


First, heat the olive oil and melt the butter in a skillet.
Mince 2 cloves of garlic and chop a medium onion and add it to the heated oil and butter. Cook approximately 3 minutes until the onion begins to wilt.


Season with the red pepper flakes and oregano and continue cooking until the onions become translucent, another couple of minutes.

Chop two roma tomatoes and add them to the skillet and cook until the tomatoes are soft.


Next, add the shrimp, lime zest and juice. Season to taste with salt and black pepper.


Cook until the shrimp are just opaque. Remove from heat and stir in the cilantro. Serve with pasta, rice or baguette. We used angel hair pasta. It was delicious!

Country Club Chicken Pasta

Last night I challenged myself in the kitchen! I love to bake but cooking isn't really my strength. I usually take the easy way out with very simple meals. However, I'll go all out for a pie or cupcake! When I saw this recipe on Pinterst I knew I wanted to try it but knew it had a lot more steps than what I was used to. I changed the recipe a little bit to fit what my husband and I like.


Inspiration



Ingredients

  • Spaghetti noodles ( I actually used angel hair)
  • 4 chicken breasts
  • 1 large onion
  • 7 oz mushrooms (we love mushrooms so I used 8 oz)
  • 2 10 oz cans concentrated cream of mushroom
  • 4 or 5 slices of bacon
  • 1/4 cup white wine
  • 2/3 cup sharp cheddar cheese
  • Butter
  • Salt & Pepper



First, I minced the onion and sliced the mushrooms.




Next, I cooked the bacon in a skillet over medium heat.



I seasoned the chicken with salt and pepper and then added a little butter to the bacon grease. Then, I slightly browned the chicken on both sides and place in a casserole dish.



Then, I used the grease from the bacon to sauté the onions for a couple of minutes.



Next, I added the mushrooms to the onions and cooked it for a few minutes more until the mushrooms were soft. I also added a little bit of minced garlic.


Crumble the bacon into the onions and mushrooms and add a pinch of salt and pepper. Add the white wine.


Add both cans of soup and the cheese.


Mix well. Pour over the chicken breasts. Put the casserole dish in a preheated 350 degree oven for 25 to 30 minutes. Or until the chicken is tender and the sauce is bubbly.



While the chicken and sauce is in the oven, boil the noodles.


Once the chicken, sauce and noodles are done, spoon out the noodles on a plate and cover with the chicken and sauce. I added some parsley too!


It was absolutely delicious! I will definitely be making this again!!!
